Cream Cheese Cookies

115 gr butter
85 gr cream cheese
1/2 Cup Island Gold Wildflower Honey (or more, depending on how sweet you want to make them)
zest of 1 lemon
2 tbsp lemon juice
1-1/4 Cup flour
Sweetened dried cranberries

Preheat oven to 350'F.
Cream together the butter and cream cheese. Add honey, lemon zest, lemon juice and combine. Add flour and mix just until well blended and smooth. Drop by heaping tablespoon or scoop onto a cookie sheet. Press a few dried cranberries into the center of each cookie. Bake 8-10 min. until just starting to go golden around the edges. Remove from oven and cool for a time before removing from cookie sheet as they are soft and need time to set. 

Variations: replace the lemon juice and zest with any other flavouring you may wish such as 1 tsp vanilla, almond or orange extract. Try pressing a chocolate chip in the centre, or an almond slice.
