Honey Orange Oatmeal Cookies

Ingredients:
1/2 cup butter or margarine, softened
3/4 cup Island Gold Liquid Wildflower Honey
1 large egg
1 teaspoon orange extract
1-1/2 cups quick cooking rolled oats
1 cup flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
Directions:
Cream the butter and Island Gold honey until smooth. Add egg, and orange extract and mix until well blended. In a separate bowl combine oats, flour, salt, cinnamon and baking soda. Add dry ingredients to creamed mixture stirring until just combined. Drop heaping tablespoons on a cookie sheet and bake in a preheated 350'F oven for 12-15 min. When cookies are golden on the bottom and starting to get golden on top they are ready. Remove to a rack to cool. Optionally you can add walnuts, raisins or dried cranberries.
Variation:
To make these cookies a Cinnamon Raisin treat, make the following changes to the recipe:
replace the orange extract with vanilla extract
increase the cinnamon to 1-½ tsp
use Island Gold Cinnamon Creamed Honey instead of the liquid
stir in a cup of raisins
